Rinse mussels under cold water. Scrub hard shells. Yank out beards. If one stays open after tapping, discard it. Do not cook mussels straight from the fridge – let them rest in a bowl with ice, loosely covered.

Cut garlic thin. Slice shallot. Open tomatoes. Pour the wine. Line it all up. Once the pan heats, you’ll have no time to reach for things.

Cooking

Set a deep pan on medium heat. Add oil. Toss in garlic and shallots. Stir until softened. Don’t brown the garlic. Just enough to smell it.

Add chili flakes. Stir quickly.

Now pour in the wine. Let it bubble and reduce – about a minute. Add tomatoes. Stir. Add salt and pepper. Let the sauce simmer for 4–5 minutes. It should thicken slightly.

Dump in mussels. Stir once. Cover with a lid. Cook for 6–7 minutes. Shake the pot once or twice during cooking. Do not lift the lid constantly. Mussels open when ready.

Any that stay shut – toss them. They were never good.

Serving

Spoon mussels into wide bowls. Pour sauce over the top. Finish with parsley. Serve hot. Bread goes on the side, not under. You’ll want it for that sauce. No butter needed.
